Ultimately, there isn't going to be that much difference between the games. Some games may have better textures or frame rates on one system, but generally the difference is going to be minimal. If you're expecting some major difference between the two systems in graphics then my advice is to not expect that. I read a quote recently by a developer that says the true potential of the PS3 is still a few years away from being reached, but it's not like they've only unlocked 10% of the power of it so far. The systems are from the same generation with mostly similar technology, there's not going to be a ton of difference. The biggest difference is the PS3 is not as easy to code for, but as time goes by developers are getting the hang of it.

Don't know. It's free. There's friends lists, messaging, chat. I've never heard anyone say the PS3's online experience is better than Xbox's, but I can't recall anyone saying it's miles behind either. Ultimately, to me, it comes down to how the games decide to handle how they run online. Some do a better job than others. In general, there's things that could be better, but there's nothing I find myself pissed off about with the experience. My friends also aren't into gaming much/at all so I rarely do any kind of party system when gaming.
If you're expecting some kind of radical difference in performance/eye candy you're gonna be SOL. You don't seem to care about the major difference in hardware (Blu-ray). Sounds like it comes down to games. You either want to play the exclusives enough to buy one, or you don't, imo.
Honestly, a lot of the PS3 exclusives don't appeal to me that much, but nowadays most games don't appeal to me that much (There's no 360 exclusive I'm upset about not being able to play). I guess I'm getting old? But Uncharted, Uncharted 2, and MGS4 are all spectacular games. Killzone 2 is good, but I don't know how strong the online community is anymore (don't play anymore). I had no desire to play the single player campaign through more than once, either. Little Big Planet is awesome but short on developer content, imo, and the user generated content doesn't match up almost all of the time. Although I believe they have a new GOTY edition that is $40 or something. Definitely worth it. I haven't played LBP in a loooong time but I don't regret dropping $60 on it. Valkyria Chronicles is good, but has a few slight issues regarding AI that bothered me. A lot of people have a boner for this game. I'm not huge into tactical games as it is, and I would have regretted paying full price for this one. But at half off it was worth it.
That's pretty much my experience with PS3 exclusives.
Edit: Transferring edit files for Pro Evolution Soccer is a lost easier on PS3 than on 360. I'm sure that's a major concern for you.
